Chocolate Raspberry Cake Recipe - Indulgent Dessert for Special Occasions**



**Ingredients:**


For the Cake:

- 2 cups all-purpose flour

- 2 cups granulated sugar

- 3/4 cup unsweetened cocoa powder

- 1 1/2 teaspoons baking powder

- 1 1/2 teaspoons baking soda

- 1 teaspoon salt

- 2 large eggs

- 1 cup buttermilk

- 1/2 cup vegetable oil

- 2 teaspoons pure vanilla extract

- 1 cup boiling water


For the Raspberry Filling:

- 2 cups fresh raspberries

- 1/4 cup granulated sugar

- 1 tablespoon cornstarch

- 1/4 cup water


For the Chocolate Ganache:

- 1 cup semisweet chocolate chips

- 1/2 cup heavy cream


**Instructions:**


**1. Prepare the Raspberry Filling:**

   - In a saucepan, combine the fresh raspberries, sugar, cornstarch, and water.

   - Cook over medium heat, stirring constantly until the mixture thickens and the raspberries break down. Remove from heat and let it cool.


**2. Preheat the Oven:**

   - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.


**3. Make the Chocolate Cake:**

   - In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

   - Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients and mix until well combined.

   - Stir in the boiling water. The batter will be thin; this is okay.


**4. Bake the Cake:**

   - Pour the cake batter evenly into the prepared pans.

   - Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center of the cakes comes out clean.

   - Remove the cakes from the oven and allow them to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.


**5. Assemble the Cake:**

   - Place one of the cooled cake layers on a serving plate.

   - Spread a layer of the raspberry filling over the top of the first cake layer.

   - Place the second cake layer on top of the raspberry filling.


**6. Make the Chocolate Ganache:**

   - In a microwave-safe bowl, heat the heavy cream until it starts to bubble.

   - Pour the hot cream over the chocolate chips and let it sit for a minute.

   - Stir until the chocolate is completely melted and the ganache is smooth.


**7. Finish the Cake:**

   - Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.

   - Let the ganache set for a few minutes.
